Spend a Sunday with Me

This isn’t going to be pretty but it’s going to be honest. And for those that like to judge, start roaring.

I wake up on a Sunday and my brain throws me a list of a hundred things to do. Number one is I’m on stories on a Sunday. To be brutally honest, it’s a 50/50 whether I go on and do them. It requires prep - thinking about what I’ll do, getting the tripod out, do I need to wash my hair, do my makeup, do I even have enough energy? The funny thing is the days I do it you guys really fill my bucket.

So much to my shame I’m addicted to the morning bean (coffee) so nothing happens until after that. I get up early and go to our local coffee shop with my husband and 3 dogs. The dogs get a lactose free puppychino. I have a long black with a dash of oat milk.

 My husband and I will have the same convo back and forth like a tennis match.

“What do you wanna do?”

“It’s up to you, what do you wanna do?”

“It’s up to you, what do you wanna do?”

“Up to you, what do you wanna have for dinner?”

“Up to you...”

It’s also my pamper day (well, it’s supposed to be). I like to shave, do a thorough exfoliation of my skin, and tan. People are often surprised when they meet me because I’m generally not wearing tan. But when I do, I feel a million bucks.

I like to prep on a Sunday for the week ahead, so I go to a really expensive small grocery store, because I just can’t muster the many people in the big supermarkets.

I keep it minimal; lots of fruit and veggies, and then fail by ordering UberEats several times a week. You see, the person who does the grocery shopping is not the same person that eats.

Then I manage to spend the arvo throwing together the dog food, prepping a couple of meals... and what my inner 90s chick really craves is a Sunday sesh, with a jug of margarita, and a bit of a dance by the beach to some 80s 90s music. Truth be told we always end up on the couch with the three dogs fighting over what to watch on Netflix. And then early to bed.

Pumpkin Feta Filo Pie

Here’s a recipe you can make vegan or vegetarian. I’ve been making this for 21 years. Mix it with a Greek salad for a divine Sunday meal.

Here’s what you need:

Diced pumpkin

Chopped onion

Filo pastry

Silverbeet (or spinach)

Fresh dill

Feta (or vegan feta)

Parmesan (or vegan parmesan)

Butter (or vegan butter)

A shake of paprika, turmeric, and chilli

Roast the pumpkin and onion with chilli, paprika, turmeric and olive oil for 30 minutes, or until the pumpkin is tender. Sauté the silverbeet, and add to the pumpkin mixture with feta and parmesan. Gently mix it together to make the pie filling. Layer about 5 sheets of filo brushed with butter for the base. Add filling and scrunch some filo pastry over the top and bake at 160° for 20-30 mins.
